Campisi’s Popular Vodka Sauce with Pasta

David Campisi from Campisi’s Restaurants joins Good Day to make one of his family’s favorite dishes. His family has been in the restaurant business since 1946. He’s part of the fourth generation and will help open a new location in Plano on Friday.

Perfect Al Dente Pasta

Bring six quarts of salted water to a vigorous boil in a large pot over high heat etc. Strain, rinse, etc.

Vodka Sauce

Penne pasta 16 oz
Garlic 2 tbsp
Salt 1 tsp
Pepper 1 tsp
White onions 3 oz
Tomatoes 3 oz
Fresh basil 2 leaves
Red pepper 1 pinch
Olive oil 2 oz
Red sauce 6 oz
Alfedo sauce 2 oz
Vodka 1 oz
Parsley 1 Pinch

Grab a pan and put olive oil, garlic, white onions and sautee for 30 seconds. Add tomatoes for 30 more seconds. Add salt, pepper and red pepper. Add vodka then cook until alcohol burns off.

Add 4oz of red sauce. Add 2oz of alfredo sauce. Add diced basil. Blend all ingredients together. Optional: Add in diced chicken, sliced sausage or whole shrimp (de-tailed). Serve in oval plate.
